Yenny's Plantain Wrap!

Here is a Yenny-Licious treat, which will have your taste buds asking for more. Inspired by my Dominican background, the Plantain Wrap is a Yenny original, which you will not find anywhere else.

The Plantain Wrap is adaptable. Get creative. Use any meat you like, and just roll with it.

There are just two main ingredients, but don’t be fooled. That doesn’t mean it’s short on taste. I’m combining plantains with turkey bacon for a quick, healthy, and incredibly tasty mini meal.

Though my family and I didn’t have much while growing up, there was definitely no shortage of “platanos“ in the Dominican Republic. It is one of the “staple” foods in my home country.

The plantain is a vegetable, which makes it a complex carb. Although it resembles a banana, which you can peel and eat as is, a plantain must be cooked. It’s such a tasty and versatile vegetable, which can be boiled, fried, baked, but it must be ripe in order to unlock its wonderful sweetness. Look for plantains that are yellowish-brown to get that sweet taste for this meal.

Green plantains, on the other hand, are not sweet, but they taste great and go with almost anything. Use it as you would a regular potato. You can make mashed plantains with it. This was a favorite of mine as a kid. My Mom added butter and hard-boiled eggs to mashed plantains. Mmmm - yummy!




The Plantain Wrap is so versatile, that you can eat it as a meal, a mini meal, or share with friends as an hors d’oeuvre.

Turkey bacon is very low in fat and it tastes great too. Plantains contain a range of vitamins - especially some in the B complex family; and minerals such as magnesium, potassium, phosphorus, and calcium! So, not only does it taste good, but it’s good for you.

1 plantain (serves 2 people) 2-6 slices of turkey bacon. 2-4 tablespoons of oil. Canola is a nice choice.

Cut off the ends, make a long slice through the skin, and peel it off the plantain. Cut the skinned plantain into two halves to make it more manageable. Slice each half the long way, into inch thick strips (almost like thick strips of bacon). You should get 4-5 slices from one half of a plantain (see photos). Bring oiled frying pan to low sizzle and add plantain slices. Cook until golden brown on each side (about 2-3 minutes). In a separate pan, fry turkey bacon until it looks crispy. Turkey bacon does not get hard like pork bacon, since it does not contain all the extra saturated fat. Once the turkey bacon is done, remove from frying pan and place the strips onto a plate. Place plantain slices on top of turkey bacon pieces, one at a time. Roll up each delicious combo and secure them with toothpicks. As they say in Paris -- “Voila“! There you have it.
