Here is a Yenny-Licious treat, which will have your taste buds asking for more. Inspired by my Dominican background, the Plantain Wrap is a Yenny original, which you will not find anywhere else.
The Plantain Wrap is adaptable. Get creative. Use any meat you like, and just roll with it.
There are just two main ingredients, but don’t be fooled. That doesn’t mean it’s short on taste. I’m combining plantains with turkey bacon for a quick, healthy, and incredibly tasty mini meal.
Though my family and I didn’t have much while growing up, there was definitely no shortage of “platanos“ in the Dominican Republic. It is one of the “staple” foods in my home country.
The plantain is a vegetable, which makes it a complex carb. Although it resembles a banana, which you can peel and eat as is, a plantain must be cooked. It’s such a tasty and versatile vegetable, which can be boiled, fried, baked, but it must be ripe in order to unlock its wonderful sweetness. Look for plantains that are yellowish-brown to get that sweet taste for this meal.
Green plantains, on the other hand, are not sweet, but they taste great and go with almost anything. Use it as you would a regular potato. You can make mashed plantains with it. This was a favorite of mine as a kid. My Mom added butter and hard-boiled eggs to mashed plantains. Mmmm - yummy!
The Plantain Wrap is so versatile, that you can eat it as a meal, a mini meal, or share with friends as an hors d’oeuvre.
Turkey bacon is very low in fat and it tastes great too. Plantains contain a range of vitamins - especially some in the B complex family; and minerals such as magnesium, potassium, phosphorus, and calcium! So, not only does it taste good, but it’s good for you.
